:tuzi6:用干枣发酵 做出的枣酒有苦味，不知道该怎么解决，也不知道什么原因，或者是枣皮上带的什么物质发苦。请懂的人赐教一下谢谢。
你用的干枣是否有枣核呢？我没试过不知道，不过老师说她当时做了不少枣制品，其中包括酒。隐约记得枣核有影响，不知道你去核了没...... 苦味是枣的固有味道，可以说苦味的大小跟枣的品质有关，这种苦味会影响到终产品的质量和味感
早期的解决办法可以通过长时间高温蒸煮去除枣皮中的苦味物质，但是这种方法容易破坏枣中的营养物质，并且带来蒸煮味
较为简便的方法便是采用掩盖法，集中添加剂复配，掩盖苦味
如果当点档次就采用吸附、浸提等手段去除苦味，其中浸提可以采用乙醇浸提的方式，苦味物质主要集中在上层
